Looking for a delicious, healthy alternative to pasta? Try Spaghetti Squash! This low-carb, nutrient-packed vegetable is the perfect base for all your favorite sauces and toppings. Once cooked, its tender, stringy flesh easily pulls apart into spaghetti-like strands, making it a guilt-free option that satisfies your pasta cravings. Whether you prefer it with classic marinara, creamy Alfredo, or a simple garlic and olive oil drizzle, Spaghetti Squash is versatile, delicious, and easy to prepare. Give it a try and elevate your meals with this wholesome, flavorful ingredient!

Estimated Cooking Time:

  • Prep Time: 5 minutes
  • Cook Time: 35 minutes
  • Total Time: 40 minutes

Servings: 2 to 4

Ingredients:

  • 1 spaghetti squash
  • extra-virgin olive oil
  • sea salt and freshly ground black pepper

Cooking Instructions

  1. Step 1: Preheat the oven to 400°F.
  2. Step 2: Slice the spaghetti squash in half lengthwise and scoop out the seeds and ribbing. Drizzle the inside of the squash with olive oil and sprinkle with salt and pepper
  3. Step 3: Place the spaghetti squash cut side down on the baking sheet and use a fork to poke holes. Roast for 30 to 40 minutes or until lightly browned on the outside, fork tender, but still a little bit firm. The time will vary depending on the size of your squash. I also find that the timing can vary from squash to squash.
  4. Step 4: Remove from the oven and flip the squash so that it’s cut side up. When cool to the touch, use a fork to scrape and fluff the strands from the sides of the squash.

Tips

If your squash is too hard to cut, soften it slightly in the oven or microwave before slicing it in half.

  • Option 1: Roast the squash whole. Prick it all over with a fork and bake at 400°F for 10 minutes, or until it’s soft enough to slice in two.
  • Option 2: Microwave the squash. Prick it all over with a fork and microwave in 1-minute bursts until it’s soft enough to cut.

Then, cut the squash in half and proceed with the recipe!

Who We Are

The Franklin County Free Press, established by Vicky Taylor in 2019, emerged as a beacon of local journalism for the residents of Franklin County. Under Vicky's leadership, it quickly became an essential source of news, particularly at a time when major newspaper publications were increasingly overlooking local coverage.

On January 1, 2022, the torch was passed to Nathan Neil and his firm, Neil Publishing, LLC. Neil, a local entrepreneur with multiple thriving businesses in Chambersburg, shares Vicky's fervent commitment to both the community and the world of local journalism.

Rooted in the heart of Franklin County and powered by its residents, the Franklin County Free Press continues to bridge the gap, ensuring that the local stories, events, and issues that matter most to the community remain in the spotlight.
